Let Me Explain

That is fact. It's not an opinion on the topic, but merely a definition. I don't believe you have to be skinny to be healthy.

MEAL PREP - Week Six

Carnitas Burrito Bowls


FOR THE CARNITAS

1 lb(s), Chicken Thighs, Boneless, Skinless (or use pork loin if you prefer)
1 tbsp(s), Garlic, raw
1 tbsp(s), Orange juice - Raw
0.33 cup, Lime juice - Raw
3 tsp, whole, Spices, cumin seed
2 tsp, Smoked Paprika
0.25 tsp, Salt and Pepper
0.25 cup(s), Chopped Green Chiles
0.50 tsp, Spices, paprika

FOR THE STREET CORN

2 tbsp(s), Lime juice - Raw
0.50 tablespoon, Vinegar, Apple Cider
2 tbsp(s), Chopped Cilantro
0.33 Cup, Chopped, Red Onion
12 ounce, Frozen, All Natural Golden Sweet Corn
0.50 container (224 grs ea.), Cotija Part Skim Milk Cheese

FOR THE CILANTRO LIME RICE

1 container (360 gs ea.), Brown Rice (Frozen)
Lime juice - Raw
Cilantro
Garlic
Salt and Pepper

OTHER TOPPINGS

0.25 tsp, Salt and Pepper
6 cups, Chopped Romaine
1 container (1.8 cup (130g) ea.), Black Beans - Low Cal


The original recipe for this meal is pretty much perfect. My husband did something slightly different and he mixed all the seasonings and juices for the carnitas together and cooked them in the crockpot all day. He then shredded the meat and mixed in the green chiles, using some of the juice from the crockpot to moisten the chicken.

The recipe is incredibly good. The meat has an awesome flavor and the cotija cheese added a really nice texture to the corn. I might replace the lettuce with something else next time because the lettuce just doesn't hold up well. Huge shout out to the person who put this recipe together. It's incredibly satisfying.
